Strawberry Salad With Wild Mushrooms Spinach

INGREDIENTS:



  •  3 tbsp olive oil
  • 150g spinach, cleaned, stems removed and torn into bite size pieces
  • 200g mixed lettuce, cleaned and torn into bite size pieces
  • 60g sliced button mushrooms
  • 60g oyster mushrooms
  • 60g shiitake mushrooms, sliced
  • 1 can mandarin oranges, drained
  • 1 lemon, juice and zest
  • 1 1/2 cup strawberries, hulled and cut in fourths
  • AJI GINISA ORIGINAL

PROCEDURE:
  1. Toss spinach, lettuce and onion together. Scatter oranges and strawberries on top.
  2. In a pan, sauté the mushrooms in olive oil and lemon juice and zest then season with AJI GINISA ORIGINAL.
  3. Pour dressing over the greens and mushrooms.



DRESSING:



  •  1/4 c. sugar
  • 1/4 c. red wine vinegar
  • 1 tsp. mustard
  • 1 tbsp. lemon juice
  • 1 tsp. paprika
  • 1/3 c. honey
  • 1/2 c. olive oil
  • AJI GINISA ORIGINAL
PROCEDURE:

Mix together in bowl sugar, mustard, paprika, honey, vinegar, lemon juice, and season with AJI GINISA ORIGINAL. Put into blender; on low speed, pour oil into mixture very slowly.
