Chorizo and Fried Egg Rice

Ingredients:
1 tbsp. cilantro, chopped
1 large egg, beaten
AJI GINISA ORIGINAL
2 tbsp. oil
1 thumb sized fresh turmeric (dilaw), sliced
1/3 cup spring onions
1/3 cup chorizo, diced
1/3 cup bacon, diced
1 tbsp fish sauce
1 tbsp. vinegar
1 tsp. white sugar
1 tbsp. soy sauce

2 cups cooked rice
Directions:

  1. In a bowl, mix together the fish sauce, vinegar and soy sauce.
  2. Heat the wok, and briefly scramble the egg, set aside.
  3. In the same wok, add the bacon and chorizo and cook, add the spring onions, turmeric and stir-fry for a couple of minutes until aromatic.
  4. Add the rice, fish sauce and stir-fry for about a minute to heat through. Add the reserved spring onions and coriander.
  5. Toss then add the egg, breaking up the pieces then season with AJI-GINSA ORIGINAL and give a final stir-fry. Serve immediately.
