Apple Pie

Pastry for 2 crusts (recipe below)
8 cups sliced, peeled assorted baking apples - about 3 lbs. (Granny Smith, Cortland, Jonathan)
2 Tablespoons lemon juice
3/4 cup white sugar
1/4 cup brown sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 Tablespoons butter
1 egg yolk
1 Tablespoon milk
Directions:
- In a large bowl, toss the sliced apples with lemon juice.

Apple Chicken Stir Fry

450 g cubed boneless, skinless chicken breast
1/2 carrots, thinly sliced
2 tbsp vegetable oil
1 tsp dried basil, crushed
100g snow peas

1/4 cup slurry
1/2 granny smith apple, cored and thinly sliced
2 cups cooked brown rice

1/4 cup coconut milk (optional)
1/3 cup water
3 tbsp butter
2 tbsp oil
1 chicken breast , cubed
6 pieces button mushroom, sliced
2 tsp curry powder
1 red bell pepper, chopped

Beef and Fried Potato Stir fry

350g Beef tenderloin, strips
3 tbsp Oil
1 tbsp cumin
2 or 3 green chilis, sliced
2 tomatoes, seeded and cut into strips
¼ Soy sauce
3 tbsp Lemon juice
AJI GINISA ORIGINAL
1 jigger brandy
1 potato, cut into fries
Hot cooked rice -- about 2-3 cups
Directions:
- Season potato fires with Aji Ginisa Original and deep fry.
- Fry beef and set aside
- Stir fry chillis and add tomatoes, cumin, soy sauce and lemon juice.

Apple Carrot Juice

Ingredients:
8 Large Fresh Cleaned Carrots
2 Large Fresh Granny Smith Green Apples
1 Large Fresh Mint Sprig
Procedure:
- Take out your two green apples and thoroughly wash and rinse them using cold tap water. Do leave the skin on your fresh apples, as it will get filtered out by the juicer and does contain a lot of good nutritional value.
- Next thoroughly wash and rinse your eight carrots.
- Finally take out a sharp kitchen knife and then quarter both the apples and carrots.
- Once all the juice has drained into your glass, give it a quick brisk stir just to make sure both ingredients are evenly distributed throughout.
- As an optional garnish add one fresh mint sprig to your glass.

Lapu-Lapu Escabeche

Ingredients:
1 cup water
6 tablespoons sugar
3 tablespoons tomato ketchup
1/2 teaspoon salt
a slice of ginger, julienne
2 medium-sized onions, cut into 8 pieces
1/2 cup pineapple tidbits
1 carrot, julienne
1 red pepper, julienne
4 green onions, sliced (leave some for garnishing)
2 tomatoes, cut in wedges
2 tablespoons cornstarch, diluted with 2-3 tablespoons water
